Dried Fig and Banana Nut Butter Toast with Homemade Date Paste

GOT DAMN. Literally one of the absolute BEST toast combinations I’ve had in a rly long time.

Does the date paste look a little unappealing?

Yes.

But the taste is so OUTTA THIS WORLD that you need to just SUCK IT UP AND TRY THIS DAMN THING. ❀ That is, if you’ve got a sweet tooth like me. πŸ™‚ ***tbh even if you’re not, you should still try it.

Foodie life update: I’ve been vegan for 2 weeks and 2 days now! Yay success! It literally hasn’t been hard at all, especially since I’m living back in California again. But even so, the first edition of Forks Over Knive’s magazine I got in January has been pulling through with the budget friendly, easy to shop for recipes πŸ™‚

So major shout out to them.

FOREWARNING: the date paste requires OVERNIGHT SOAKING. So you best be prepared to do that.

Now, onto it! Your taste buds will thank me.

DATE PASTE:

WHAT YOU NEED:

  • 4 cups of pitted dates
  • 1 1/2 cups boiling water

WHAT YOU NEED TO DO:

  1. Pour boiling water over dates and let soak in an air tight container for 3-8 hours.
  2. Pour contents into a blender and pulse away! Store in air tight container in the fridge.

TOAST:

WHAT YOU NEED:

  • 2 pieces sprouted whole grain Ezekiel bread
  • 1/2 ripe banana
  • 4 dried figs (I like Trader Joe’s b/c they don’t contain any other ingredients like preservatives, added sugars, weird chemicals, etc. Legit JUST the dried figs)
  • Trader Joe’s mixed nut butter (this sh*! is forreal. It contains almonds, cashew nuts, walnuts, brazil nuts, hazelnuts, pecans, and sea salt)
  • Sum o dat sweet date paste, fam
  • Cinnamon

WHAT YOU NEED TO DO:

  1. Toast the bread (duh). Spread a generous layer of the mixed nut butter onto the toast. Add slices banana, sliced figs, apply date paste in a failed attempt to be neat like above, sprinkle cinnamon, and enjoy! πŸ™‚ ❀

Goes great with a cup of TJ’s dark roast coffee.
